Phoenix hops are a unique variety developed by Wye College in England. Pine, subtle floral notes, and spice are the most common descriptors, with some brewers also noting hints of dark chocolate and molasses. Phoenix delivers a smooth bitterness that adds dimension to classic English ales, as well as darker styles like porters and stouts, where it can complement rich, roasty character.
