LalBrew® Farmhouse™ is a non-diastatic hybrid Saison yeast developed by Renaissance Yeast in Vancouver, BC. Using classical and non-GMO breeding methods, the Renaissance team removed the STA1 gene responsible for the diastatic activity of traditional Saison strains, while retaining normal brewing sugar utilization. The result is a beautifully dry Saison without the risk of over-attenuation or over-carbonation after packaging. Patented technology from the UC Davis also ensures the strain does not produce sulfurous off-flavors, letting the classic Saison yeast aroma shine.
