Australian Ella Hop Profile
Previously named Stella, Ella™ is the little sister of the Australian superstar Galaxy®. Ella™ and Galaxy® share the same mother, but Ella's father comes from Spalt, Germany, giving her a noble edge. The pleasant floral and soft spice aromas are rounded out by light, sweet fruit flavors hailing from her Aussie background. These qualities work best in lagers and pilsners, yet Ella™ also complements pale ales and IPAs in late additions. Adding to the dry-hop or whirlpool will preserve some of the light, tropical fruit oils similar to Galaxy. Floral, spicy, and softly sweet, she’s a Southern Hemisphere lager hop ready to surprise.

Ella Hops Description from HPA
CHARACTERISTICS
A low dose delivers soft florals and fragrant spices reminiscent of a noble variety, while a high dose delivers grapefruit and tropical flavours that can be used to balance heavier malt bills and strong yeast characters in many beer styles.
ANCESTRY
Ella™ was created by the HPA breeding program in 2001 and commercialised in 2011. Its ancestry is the result of a cross pollination of high alpha Australian and Spalt hops.
