Talus Hop Profile
Previously known as HBC 692 and a daughter of Sabro®, Talus® is a variety from the Hop Breeding Company, a joint venture between John I. Haas and Yakima Chief Ranches. Talus bursts with a layered bouquet of pink grapefruit, citrus rinds, dried roses and resinous pine, rounded out by tropical fruit and sage. These flavors are well-suited for West Coast and Northwest-style IPAs, though it's an impactful fit in many beer styles. Talus also has an uncommon 1:1 ratio of alpha to beta acids, a characteristic highly sought after by German brewers for pilsners because it helps create a more "harmonious" bitterness.
