Unmalted Wheat is a raw, clean wheat grain. Unmalted Wheat usually keeps its white, cloudy color. It has a strong grain and light toasty flavor and is used in many traditional Belgian styles to increase head formation. The starch in this grain is un-gelatinized and the protein content is high. Depending upon use, a cereal mash and/or protein rest may be advised.
