Chinook Hop Profile
Chinook hops are a product of the USDA breeding program in Washington State. It was originally bred as a bittering hop back in 1985, but has recently been recognized as a dual-purpose hop that is well rounded and suited for many different styles. It has predominately spicy and piney characteristics that transfer through into the flavor and aroma. Chinook also contributes bright grapefruit notes that accentuate its clean bitterness.
Chinook hops are noted for their higher Geraniol content, which is biotransformed by yeast into Citronellol a highly-sought-after aroma compound in fruit-forward IPAs.
Aroma: Fruity, Piney, Spicy, and similar to cascade.
Alpha Acid: 12.5 to 14.0%
Typical Usage: Dual purpose .
CHINOOK HOP SUBSTITUTIONS
Chinook hops carry a lot of the same characteristics as Columbus, Nugget, and Warrior, making these hops the perfect candidates for substitutions. Their high Alpha Acids are great for IPA and American style ales.
